Too long overdue

Okay, I promised recipes from last week's part when I felt better. I still don't feel better (now running low fever), but
Icelandic Chicken
Croissants with Proscuitto & Cheese
Cinnamon Puff
Bean & Rice
Chicken & Cauliflower in Curry Cream Sauce on Sesame Crackers
Vegetarian Pasta and Veggies in Cream Curry Sauce
I know that the spacing is a little wonky but I feel too yucky to mess with it now.
S
- Chicken Breast
- Bacon
- Sage
- Bread dough (I used Rhodes dinner rolls)
Cut chicken breast in to sizes that are two-three bites big (I used thirds). Place a couple of sage leaves on each side. Wrap chicken and sage in a half-slice of bacon and wrap in dough. Bake at 350 until the internal temp of the chicken is 170-180. Actually these freeze reasonably well (though thaw them on a rack so they don’t get soggy).
- Croissant dough
- Proscuitto (thinly sliced)
- Provolone (thinly sliced)
Layout the croissant dough. Place a half slice of provolone on the dough, a piece of proscuitto and the other half of provolone. Roll up. Cook 10 or so minutes (whatever the croissant dough requires).
- 2 lbs. Bread dough
- Cinnamon
- Sugar
- 1 to 1.5 sticks of Butter
- Nutmeg
Mix cinnamon, sugar and nutmeg together until they are a rich-red brown (I never measure, just tell by looking). Roll bread dough into walnut size pieces. Roll in butter then in sugar mixture. Place in bundt cake pan, packing rather snugly. Continue adding layers until done. Place remaining sugar mixture on the top and drizzle remaining butter over it. Bake 35-40 minutes (or until done). Let cook for 15-20 or so minutes, then turn out onto a serving plate. Serve hot or cold.
- Beans
- Cilantro
- Rice
- Butter
- Sour Cream
Cook rice. Add beans (I like to ratio of 4 cups of rice to 3 cans of beans) and cilantro (couple of teaspoons). Let sit in the refrigerator overnight. Melt butter in skillet until hot. Add beans and rice mixture to skillet. Stir once in a while, but press down so it will get crusty. Serve hot with sour cream as an add-in (this is VERY popular in Costa Rica).
- Chicken
- Cauliflower
- Sauce
- Mayo
- Buttermilk
- Curry powder
- Salt
Cook chicken and cauliflower (I prefer my cauliflower to be tender but still have some snap). Let cool.
Mix mayo, buttermilk, salt, and curry powder together and drizzle over cooled chicken/cauliflower mix.
- Broccoli
- Pasta
- Sauce
- Yoghurt
- Buttermilk
- Salt
- curry powder
Cook pasta and broccoli (I prefer my broccoli to be tender but still have some snap). If this will be served cold, let cool.
Mix yoghurt, buttermilk, salt, and curry powder together and drizzle over pasta/broccoli mix.
I know that the spacing is a little wonky but I feel too yucky to mess with it now.
